This is “The” Pesto,
the fresh one,
the one as just made by hand in the family kitchen.
This Genoese Pesto is preserved in the fridge and therefore it can better express the colour, smell and taste of the tradition. It is a no compromise recipe for gourmets, the recipe which has been canditate as UNESCO Intangible Cultural Heritage.
Traditionally it gives its best with trofie, linguini, gnocchi and testaroli.
