In summer, use Pesto Genovese to stuff cherry tomatoes for a delicious appetizer. Mixed with ricotta cheese or béchamel, Pesto is also the filling of a wonderfully unusual Lasagna. In Liguria, a teaspoon of Pesto is tradionally added to a bowl of good vegetables minestrone soup, but why not using it also with the leek and potato soup or with a cream of zucchini soup?
